    <p>Широко распространенным ингредиентом для различных отраслей пищевой промышленности является сухое молоко. Серьезную проблему при использовании сухого молока, прежде всего обезжиренного (СОМ), представляет его фальсификация молочной сывороткой. Одним из перспективных способов обнаружения примесей сыворотки в сухом молоке является определение наличия в его составе гликомакропептидов. Уникальными характеристиками гликомакропептидов являются присутствие гликозилированных гетерогенных углеводных цепей, во многом определяющих их биологические и функциональные свойства. Колориметрический и флуориметрический методы обнаружения гликомакропептидов основаны на присутствии в их структуре остатков сиаловой кислоты. В статье проанализированы различные методы определения гликомакропептидов: метод электрофореза в полиакриламидном геле и капиллярный электрофорез, иммунологические, биосенсорные и хроматографические методы. Отмечены их преимущества и недостатки, в том числе – при определении присутствия гликомакропептидов в сухом обезжиренном молоке. Разработка универсального метода идентификации гликомакропептидов в качестве показателя, подтверждающего фальсификацию сухого молока, является актуальной задачей, требующей дальнейших исследований и практической реализации.</p>

   <trans-abstract xml:lang="en">
    <p>Milk powder is a popular ingredient in various branches of the food industry. However, skim milk powder is often made of whey, which classifies as food fraud. Glycomacropeptide analysis can detect whey in milk powder. The biological and functional properties of glycomacropeptides depend on glycosylated heterogeneous carbohydrate chains. The colorimetric and fluorimetric method of detecting glycomacropeptide analysis relies on detecting sialic acid. The article describes the advantages and disadvantages of such methods of glycomacropeptide tests as polyacrylamide gel or capillary electrophoresis, as well as immunological, biosensor, and chromatographic methods. A universal glycomacropeptide test that could detect whey in milk powder remains an urgent task that requires further research and practical implementation.</p>
