    <p>Обогащение социально-значимых продуктов питания наноэмульсией витамина А является одним из решений проблемы его дефицита. Целью работы стало исследование влияния наноэмульсии витамина А на физико-химические параметры молока. В рамках работы использовалось пастеризованное молоко жирностью 3,2 %. Для синтеза наноэмульсии витамина А смешивали витамин А и Tween 80, который использовался в качестве солюбилизатора. Исследование среднего гидродинамического радиуса мицелл наноэмульсии витамина А проводили методом динамического рассеяния света. Показано, что средний гидродинамический радиус мицелл витамина A в образце составляет 62 ± 13 нм. В результате установлено, что обогащение молока наноэмульсией витамина А незначительно влияет на физико-химические свойства молока: титруемая кислотность, радиус белковой и жировой фракции, ζ-потенциал и электропроводность. Полученные данные позволяют сделать вывод о том, что разработанная добавка может использоваться в молочной промышленности в качестве источника витамина А.</p>

   <trans-abstract xml:lang="en">
    <p>Vitamin A deficiency can be compensated by fortifying socially essential foods with its nano-emulsion. This research featured the effect of vitamin A nanoemulsion on the physicochemical parameters of pasteurized milk with a fat content of 3.2 %. To synthesize the vitamin A nano-emulsion, vitamin A was mixed with Tween 80 as a solubilizer. The dynamic light scattering method showed that the average hydrodynamic radius of vitamin A micelles was 62 ±13 nm. In this study, vitamin A nano-emulsion had no significant effect on such physicochemical properties of milk as titratable acidity, radius of protein and fat fractions, and ζ-potential and electrical conductivity. The additive demonstrated good prospects as a source of vitamin A to be used in the dairy industry.</p>
