    <p>Непрерывная холодильная цепь (НХЦ) является тем технико-технологическим инструментом, который позволяет не только создавать условия для производства продукции, но и доставлять ее к потребителю с минимальными потерями качества. Молочная продукция относится к разряду скоропортящейся и поэтому требует повышенного внимания. Для сохранения ее качества необходимо соблюдение требуемых температурных режимов при продвижении от производителя к потребителю. Проанализированы температурно-временные профили охлаждающей среды (воздуха) и творога в потребительской упаковке на завершающих этапах НХЦ. Экспериментальные исследования позволили оценить влияние условий транспортирования и предреализационного хранения творога в торговом холодильном оборудовании на температурные изменения продукта и их соответствие требованиям технического регламента.</p>

   <trans-abstract xml:lang="en">
    <p>Continuous refrigeration chain (CRC) is a technical and technological tool that allows not only to create conditions for the production of products, but also to deliver them to the consumer with minimal loss of quality. Dairy products are classified as perishable products and therefore require increased attention. To maintain its quality, it is necessary to comply with the required temperature regimes when moving from the producer to the consumer. The temperature-time profiles of the cooling medium (air) and cottage cheese in consumer packaging at the final stages of the CRC are analyzed. Experimental studies made it possible to evaluate the influence of the conditions of transportation and pre-sale storage of cottage cheese in commercial refrigeration equipment on temperature changes in the product and their compliance with the requirements of the technical regulations.</p>
