    <p>Рысь (Lynx lynx Linnaeus, 1758) является ценным охотничьим животным и перспективным объектом пушного звероводства. Цель исследования – изучить отдельные показатели мясной продукции обыкновенной рыси и возможности ее использования как промыслового животного на территории Кировской области.&#13;
Объекты исследования – морфометрические параметры и образцы проб мяса для физико-химического анализа 137 особей рыси, из них исследовано на трихинеллез – 90. Статистический анализ проводился с использованием программного обеспечения MS Excel и Statgraphics общепринятыми методами. Для описания выборок определяли среднее значение (M), ошибку среднего (m). Для проверки достоверности различий между двумя выборками использовали критерии Стьюдента, Фишера, метод множественного сравнения Ньюмена-Кейсла, а также непараметрические критерии Манна-Уитни. Нулевую гипотезу отклоняли на уровне значимости менее 0,05.&#13;
Рассмотрена возможность пищевого использования мяса рыси, которое, согласно приведенным исследованиям, обладает  пищевой ценностью и отличается высокими вкусовыми качествами. На основании исследований по радиционным методикам материала от 137 рысей, добытых на территории Кировской области и сопредельных территорий, рассчитаны показатели мясной продуктивности мяса рыси, на основании которых произведена оценка стоимостных ресурсов данного вида продукции (500 руб./кг) и предполагаемый вклад в региональную экономику области при легализации добычи данного вида в качестве источника пищевой продукции (562,50 тыс. руб.). Проводили сравнительный анализ мяса рыси и мяса сельскохозяйственных животных. По содержанию влаги (50,47 %) мясо рыси уступало мясу всех сельскохозяйственных животных, кроме свиней. По содержанию золы (5,60 %) мясо рыси в 4,6 раза превосходило крольчатину, а по содержанию белка (25,14 %) имело наивысшие показатели среди всех использованных в сравнении видов. Мясо рыси имело низкое содержание жира (1,81 %) и калорийность (116,86 ккал/100 г). В наибольшем количестве зола содержалась в мясе полуторогодовалых животных, а белок – животных текущего года рождения (сеголетков). Витамина А в мясе рыси в 4,0 раза меньше, чем в мясе нутрии, а витамина Е – в 8,7 раза больше. Витаминов В2, В3, В4 больше в мясе сельскохозяйственных животных, а В1, В6, В12 – в мясе рыси.&#13;
Учитывая широкий ареал вида, различия в природных условиях, неоднородный состав объектов питания, региональные геохимические особенности в районах добычи, мясо рыси может иметь неоднородные характеристики и  химический состав, на который также влияют пол, возраст, физиологическое и репродуктивное состояние, сезон и способы охоты. Изучена зараженность трихинеллезом мясной продукции, получаемой при убое рыси. Основным препятствием для потребления мяса рыси является высокая распространенность трихинеллеза в природных популяциях этого хищника. Полученные данные могут быть использованы при разработке и утверждении государственных стандартов на мясо рыси на территории России.</p>

    <p>The lynx (Lynx lynx Linnaeus, 1758) is a valuable game and fur farm animal. The article describes the game potential of the lynx in the Kirov Region, Russia, and the nutritional profile of lynx meat.&#13;
The morphometric and physicochemical analysis covered 137 samples of lynx meat, 90 of which were tested for trichinosis. The statistical analysis involved MS Excel and Statgraphics software, as well as the methods of Student’s t-test, Fisher’s test, the Newman-Keuls multiple comparison method, and the nonparametric Mann-Whitney test (p ≤ 0.05). Lynx meat demonstrated satisfactory nutritional value and sensory properties. The meat yield indicators made it possible to estimate the product value as 500 rubles/kg and its potential contribution to the regional economy (562,500 rubles if lynx is ever legalized as a game species). In terms of moisture content (50.47%), lynx meat was inferior to that of most conventional farm animals, except for pork. It contained 4.6 times as much ash (5.60%) as rabbit meat. In terms of protein content (25.14%), it demonstrated the highest indicators while being low in fat (1.81%) and calories (116.86 kcal/100 g). The highest ash content belonged to the meat of 18-month-old animals while the highest protein content was found in animals born in the year of consumption. The content of vitamin A was 4.0 times as low as in nutria meat but the content of vitamin E was 8.7 times as high. Lynx meat was rich in vitamins B1, B6, and B12 but contained little vitamins B2, B3, and B4.&#13;
The sensory profile and physicochemical characteristics depended on the environmental conditions, diet, sex, age, physiological and reproductive status, season, and hunting methods. However, the high susceptibility to trichinosis in natural populations may affect the commercial potential of lynx meat. The data obtained can be used to develop state standards for lynx meat in the Russian Federation.</p>
